Job Descriptions:

Duties and Responsibilities:

 

  • Conduct routine chemical analyses of raw materials, semi-finished products, and final products, including milk, cream, butter, juices, concentrates, and additives.
  • Perform tests to measure fat content, protein levels, sugar content (Brix levels), acidity (pH), moisture content, and other relevant chemical parameters.
  • Ensure that all products meet quality specifications and regulatory requirements by performing tests such as titration, chromatography (e.g., HPLC, GC), spectrophotometry, and others.
  • Verify that the chemical composition of products adheres to company standards and industry regulations.
  • Work closely with production teams to monitor and control key process parameters, ensuring that products maintain their chemical integrity throughout the production process.
  • Test and adjust parameters during pasteurization, homogenization, evaporation, or other critical processing stages to ensure product consistency.
  • Ensure that all chemicals used in the laboratory are handled safely and that proper storage, labeling, and disposal procedures are followed in compliance with safety regulations (OSHA, EPA, etc.).
  • Maintain chemical inventories and ensure compliance with safety protocols, including the proper use of personal protective equipment (PPE) when working with hazardous materials.
  • Assist the research and development (R&D) team in formulating new products or improving existing ones by conducting chemical analyses on prototypes and experimental batches.
  • Provide input on chemical stability, ingredient compatibility, and preservative efficacy to help optimize formulations for new dairy and juice products.
  • Conduct shelf-life studies to assess the stability of products over time, testing for chemical changes that could affect product safety, flavor, or quality.
  • Analyze the effects of different storage conditions on product stability and provide recommendations to extend shelf life.
  • Test the quality of water used in production processes, including testing for hardness, pH, mineral content, and any potential contaminants that could affect the quality of the final product.
  • Ensure that the water used meets regulatory and company standards for purity and suitability for use in food production.
  • Analyze the interaction between packaging materials and the products to ensure that packaging does not chemically react with the product or compromise product quality.
  • Test for factors such as oxygen transmission rate (OTR), chemical leaching, and migration of substances from packaging into food products.
  • Investigate any chemical-related issues that arise during production, such as unexpected changes in product composition, off-flavors, or texture inconsistencies.
  • Provide technical solutions to address chemical defects and work with production teams to resolve issues that affect product quality.
  • Maintain detailed and accurate records of all chemical analyses, test results, and any adjustments made to the process or product formulations.
  • Ensure that all documentation complies with internal standards and external regulatory requirements for traceability and audit purposes.
  • Ensure compliance with food safety regulations (e.g., FDA, EFSA, USDA) related to chemical composition, ingredient usage, and product labeling.
  • Keep up to date with industry standards and regulations regarding food chemistry, such as maximum allowable levels of preservatives, additives, or other chemicals.
  • Collaborate with the quality assurance (QA) team to ensure that all products meet the required specifications before release.
  • Work with production managers, microbiologists, and R&D teams to ensure that the chemical quality of the products is maintained throughout the production process.
  • Calibrate and maintain laboratory equipment such as pH meters, tiltrotors, spectrophotometers, chromatographs, and other analytical instruments.
  • Ensure that all equipment is functioning properly, regularly calibrated, and that preventive maintenance schedules are followed.
  • Identify opportunities for improving the efficiency and accuracy of chemical testing procedures.
  • Participate in continuous improvement initiatives to enhance product quality, reduce waste, and optimize production processes.
  • Support sensory analysis by correlating chemical properties with flavor, texture, and appearance, ensuring that chemical analyses align with sensory results.
  • Collaborate with the sensory evaluation team to address any discrepancies between chemical and sensory data.

  • May require standing for long periods and using personal protective equipment (PPE).
